DEHESA FUENTE YMBRO
The Farm
The farm is divided into 4 main parts:
First we find the mountain range “sierra”, where our goats graze in total freedom.
Then we find the part of the farm that is dedicated to the farmland for self-supply agriculture. Third, we find almond and olive groves; and finally, the pasture, home of all the native holm oaks in the area.
All these areas surround the central lake which is one of the largest freshwater reserves in Andalusia.

Extra Virgin Olive Oil
The olives are collected at their exact moment of ripening and are ground in a maximum time of 48 hours after harvesting to ensure that the oil maintains its qualities. The transformation process is 100% natural, without chemical elements or additives. The Andalusian climate favours this land by allowing each harvest to develop a unique variety of olive oil.

Cattle
In our farms we can find different livestock farms: beef, horses, goats and pigs. In this setting, cows and calves graze in complete freedom without any type of housing. The environment in which they are raised allows animals to pass all-natural forages.

Cheese
Our goat cheese is made through artisan techniques using milk from 100% native goats raised in Sierra de Cádiz. We believe that behind the quality of our cheeses is the rusticity that characterizes our animals’ nourishment, who are capable of grazing in areas that are difficult to access and take advantage of the richness of the pastures that surround it.

Agriculture
Our agricultural exploitation is mostly done for self-supply, to feed our animals. The main crops are barley, wheat, oats, hay and alfalfa. Recently, the almond tree harvest has been incorporated thanks to the great benefits and variety this nut offers.

Iberian pig
Our land provides the pigs with acorns from olm trees and olive trees. These pastures are characteristic of the Sierra de Cádiz and provides rich nutrients that enables the Iberian pig to produce the best of hams.

Horses
The horse is a primary tool for livestock management, especially in our area, where the ground can be very broken, and horses become an essential ally to move the animals from one place of the land to the other. Apart from field work we currently practice different disciplines such as, dressage or Spanish dressage among others.

Location

At the end of Jerez’s countryside, at the edge of Sierra de Cádiz bordering the Guadalcacín lake and close to the Alcornocales Natural Park, we can find Fuente Ymbro. A unique and privileged environment with a great natural diversity and a very favorable climate essential for the development of species and cultivation.
